STRAWBERRY & PEACHES SODA WITH MATCHA JELLY

Type: Iced only

INGREDIENTS

  • Matcha jelly: 50 g

  • White peach jam: 50 g

  • Strawberry jam: 20 g

  • Soda water: 300 g

  • Ice: As needed

MATCHA JELLY

Yield: Approximately 500 g, or ten 50 g portions

INGREDIENTS

  • Water: 450 g

  • Sugar: 40 g

  • Matcha powder: 6 g

  • Agar powder: 4 g

PREPARATION

  1. Sift the matcha powder into a small bowl. Add approximately 30 g of the measured water and whisk until smooth, with no visible lumps.

  2. Add the remaining water, sugar, and agar powder to a saucepan. Whisk thoroughly before heating.

  3. Bring the mixture to a gentle boil over medium heat, whisking continuously. Continue boiling for approximately 1 minute to fully activate the agar.

  4. Remove the saucepan from the heat. Add the prepared matcha mixture and whisk until evenly combined.

  5. Pour the mixture into a shallow container and allow it to cool slightly.

  6. Refrigerate for at least 1 hour, or until completely set.

  7. Cut the jelly into small cubes. Store refrigerated in a sealed container and use 50 g per drink.

DRINK PREPARATION

  1. Add 50 g of matcha jelly to the bottom of the serving cup.

  2. Fill the cup with ice, then add 300 g of soda water.

  3. Mix the white peach jam and strawberry jam until evenly combined.

  4. Slowly pour the fruit mixture over the soda water to create a layered effect.

  5. Serve immediately with a wide straw or spoon so the matcha jelly can be enjoyed with the drink.

Note: This drink is served iced only and cannot be prepared hot.
